Hi Aaron,
I plan to put an opening forward of the engine but aft of the current opening for better access to the stuffing box and my new shaft driven alternator.
I also want to put an opening inboard of the refrigerator/stove for storage and access to the reefer compressor unit (and probably the watermaker plumbing).
Finally, somehow, along the table I want an opening that allows access to all that yummy space on top of the keel aft of the mast.
How to do it is more problematical – I'll cut the holes carefully with a circular saw and remove the plank. Then reroute any wires/plumbing in the opening, then frame the opening appropriately (and maybe reinforce with member to hull). The removed piece will get shaved by 1/2″ all around and teak frame attached. Eh Voila! New hatch.
Also, I'll be adding positive catches to all the floorboard openings. (See http://marinepartdepot.com/dring.html )

Under my sole is getting crowded. Also, there's a tremendous amount of space that can be used for storage. Behind the tanks seems to be a great idea. Oh, and I have very poor access below the sole. I plan on remedying this with new openings.
